Definition
Dietary fat is a macronutrient your food logger breaks into several logged types: total fat, saturated, monounsaturated, and polyunsaturated fat, trans fat, and dietary cholesterol. It supplies about 9 kilocalories per gram, roughly double the energy density of protein or carbohydrate,[4] and each type has a different, well-studied effect on blood lipids.[1]

What Dietary Fat Is
Fat is one of three macronutrients, alongside protein and carbohydrates, and it's the most energy-dense of the three at about 9 kilocalories per gram against roughly 4 for the other two.[4] Not all fat behaves the same way once it's in the body. Saturated fat and trans fat are generally solid at room temperature, while monounsaturated and polyunsaturated fat are liquid, a difference that comes down to how many double bonds sit in the fatty acid chain.[1]
That structural difference has a measurable downstream effect. Saturated fatty acids decrease the liver's LDL receptor activity, which slows the clearance of circulating LDL and raises LDL cholesterol, while monounsaturated and polyunsaturated fats do the opposite, increasing LDL receptor activity and helping clear LDL from circulation.[1] Dietary cholesterol, the last logged fat-related nutrient, is a distinct value from the total cholesterol, LDL, and HDL measured on a blood lipid panel. It's the cholesterol in the food itself, not the cholesterol circulating in your blood.

Why People Track Dietary Fat
Dietary fat and blood lipids are related but separate things, measured in completely different ways. What you log at a meal is food on a plate. Trans fat gets particular attention because of how quickly the food supply changed around it. In 2015 the FDA determined that partially hydrogenated oils, the main source of artificial trans fat in processed food, were no longer generally recognized as safe, with most uses required to be phased out by June 18, 2018.[2] Dietary cholesterol has had its own shift in how it's discussed. The 2015–2020 Dietary Guidelines for Americans dropped the longstanding 300 mg/day cap because the evidence didn't support a specific numeric limit, a change grounded in research finding that dietary cholesterol's link to blood cholesterol and cardiovascular risk was weaker than once assumed.[3]

What the Research Shows
The mechanism behind saturated fat's effect on cholesterol runs through the liver. Saturated fatty acids reduce hepatic LDL receptor activity, protein, and mRNA levels, slowing how fast circulating LDL gets cleared, while unsaturated fatty acids increase that same receptor activity and clearance, and polyunsaturated fat also improves membrane fluidity in a way that helps LDL receptors bind LDL more effectively.[1]
Fat's energy density is fixed and well established: proteins and carbohydrates both provide 4 kilocalories per gram, while fat provides 9.[4]
On dietary cholesterol, a 2018 review in Nutrients concluded that the totality of scientific evidence and experimental data did not validate the hypothesis that dietary cholesterol increases blood cholesterol, and by extension increases the risk of cardiovascular disease, which is part of why the 2015–2020 Dietary Guidelines dropped the 300 mg/day cap rather than lowering it.[3]

Why did trans fat mostly disappear from packaged foods?
In 2015 the FDA determined that partially hydrogenated oils, the main dietary source of artificial trans fat, were no longer generally recognized as safe for use in food. Manufacturers had until June 18, 2018 to remove them from most products, which is why trans fat largely disappeared from the packaged food supply.
